Hello Maximiliano,
if you have no use for the fax field, you can just use this one for an extra phone number. In the component, you can re-assign icons or labels to fields so that the fax field can look like a regular phone number field.
If you need even more fields, you will be able to do so in Joomla 3.7 where custom fields will be supported for the contacts. The component will support that feature also. It should be a little over a month away
